Fresh, bold, summer taste in a bowl!

Hubby declared, "I think it's the best salad I've ever tasted!"

Ingredients for two meal salads
Fresh cooked corn, two cobs, scraped
Fresh sweet pepper, deseeded, half, chopped
Fresh sweet onion, 3 Tbsp, minced
Fresh, field ripened tomato, 1/2 large, finely chopped
Local boiled eggs, two, peeled, chopped
Fresh local green beans, 1 cup, cooked, sliced
Red kidney beans, 3/4 cup, canned, drained, rinsed
Fresh mixed greens, handfuls
Feta cheese, 4 Tbsp

Dressing
3 to 5 Tbsp leek EVOO (or any EVOO to preference)
1 Tbsp jalapeño EVOO or 1 tsp finely chopped Fresh jalapeño with 1 Tbsp EVOO
1 lime, squeezed
Smoked paprika, to taste
Hickory smoked sea salt, to taste
Hickory smoked pepper, to taste
Lemon Twist sea salt, to taste

Mix corn, sweet pepper, onion, 1/2 cup tomato, red beans, spices/salts together. Set aside. Place handfuls of mixed greens each in two bowl. Add cooked green beans, 1/4 to 1/2 extra pieces (chunks) tomatoes evenly divided on top of greens. Divide red bean onion spice mix and put on top of other ingredients in each bowl. Top with 1 chopped egg each and divided feta cheese. Serve immediately.

In the serene forested valley / hills at the foot of Blue Nose Mountain is @foreverhomesanctuary a loving home for rescued furry and feathered friends living their best lives, until forever ❤️

At the Sept 29 long table fundraiser event, we first toured part of the facilities where we met some of the 🐎🐐🐑 residents. This was followed by a delicious vegan meal and alcohol free drinks with live painting and soothing sounds while we dined.

HIGH PROTEIN FIBER-RICH EARTH-TONES SALAD

Feeling a bit under the weather, at home to get rest. Thought, what to make for lunch that is quick... something to nourish? (I'll have soup later for a lighter supper.)

Here! In 10 minutes, a salad enough for two servings. There is high fiber, protein, clean taste, and nutrition in each mouthful of this earth-tones meal. You can adjust the ingredients to make it fit what is in your pantry.

*can of tuna or salmon, sustainably caught/ocean friendly drained
*2 celery stalks, chopped
*1 can of butter beans (approx 370 ml)
*10 almond stuffed 🫒 (from @oliveoilbc), sliced
*chives or green onions, finely chopped, to taste
*fresh greens

Dressing
*1/8 cup UP EVOO (used @oliveoilbc Galega)
*1/2 🍋, freshly squeezed
*1 Tbsp Dijon mustard
*Lemon Twist & Toasted Onion sea salts, pinch of each
*freshly ground pepper
*dried garden basil and dill

Add main ingredients except greens to bowl. Stir well the dressing. Pour dressing over. Toss all to coat. Place fresh greens on a plate and scoop the butter bean mix on top. Enjoy immediately!

Well, it's kind of a fridge and pantry clean out (even stuff still from the Christmas season) with a few fresh items tucked in here and there.

Hello! It's Loretta. I'm happy to meet you. It's been a long while since I've posted, and even longer since I've popped on here to introduce myself/give an update on what's going on!

As a food lover, gardener, creator, and people-person I enjoy making, growing food, and meeting new folks like you who enjoy conversations, helping others, and being absolutely silly once in a while, laughing from the belly (me, more than once in a while 😄, right dear friends who know me??)

One of my other passions is walking and preferably outside. While I do enjoy snowshoeing, hiking, and yes, gardening, it's the walking experience that I love the most.

This year, I've decided to *try* to get to 1000 hours of outdoor time. Doesn't, of course, need to be accumulated by just walking, but for me, it's a motivator to walk outside even more... no matter what the weather! EDIT: Priority is to stay safe. While I used to walk even in -40C weather when living on the prairies, everything was covered and I wasn't out for long. Don't be a hero... you're smart I know. ❤️

So, if you like, how about joining me on this adventure (notice I didn't make a NY's resolution for this). ADVENTURE is what I'm calling it! Watch my stories, and how about tagging me in your posts or stories. Love to journey together.

No matter what, please get outside if you can to support your health. You don't need to go for all those hours, but you may surprise yourself how addictive it can be to make sure you get out there!

So as I close this post on Day 10 of this challenge -- averaging about an hour a day (I know I'll have to upp my time to meet 1000 hours by year end but I'll get there!) -- I say go for it, do what you can, and enjoy the adventure.

😋 3 years in the making!

It's been THREE years since we were in Penang, Malaysia. Yes, just before the world shut down we squeaked in a month's stay on this beautiful island.

I've been wanting to make a version of this delicious dessert we tasted when there. While I didn't have all the ingredients to make a true replication, I think I came pretty close!

What we have here is:
*Crushed ice with crushed frozen local cherries (my version, usually it's shaved ice with pink syrup and other colorful syrup drizzled on the ice)
*creamed corn - I used corn blended with coconut cream
*red bean paste
*sliced banana
*mango (ice) cream with honey - I blended frozen mango with coconut cream and a bit of local honey
*crushed peanuts
*evaporated milk drizzle (hubby had)
*black grass jelly, cubed

I couldn't find attap chee or other usual ice kacang additions. We also enjoyed it in Penang with fresh fruit like watermelon balls but it's not melon season here so I didn't bother adding.

So while this dessert is especially yummy on a hot day, I surprised hubby as a near Valentine's treat today. We both fondly recalled our special trip together while licking our spoons.

Food Story: JULY 1, 2022

We were so fortunate to have my nephew @mylifelookslike and his wife @jesshoward26 from Boston stay with us earlier this summer. It was planned in advance for many months!

Despite only being out of the hospital then for just over two weeks, I did everything I could to save every ounce of energy to spend as much time with them.

I truly believed they helped me in my healing process/progress by being themselves: attentive, kind, fun, thoughtful, loving ❤️
.
With all our house guests, I strive to create a unique board. I NEEDED to do this. While it took me extra time (and with the help of my trusty walker "Bob" to stabilize me while preparing), I was SO HAPPY to create this for us all to enjoy.

I made extra for sauce!

I cooked basmatic rice while waiting for the shrimp to be marinated then cooked (with the squash).

Fresh pineapple boosted the flavour along with the rest of the ingredients from my garden: yellow and red cherry tomatoes, pattypan squash, cucumber, carrot ribbons, chives, garlic chives.

Keep the oven and stove off!

You need not get fancy pancy. Just throw your goodies on, tuck in some fresh seasonal produce, leftovers, whatever! Just don't cook!

This board came together in under 30 minutes. Better than slaving away over a hot stove or even BBQ!

Oh why not, free recipe below!

Here are the loose ingredients, to taste:
*2 cups cooked quinoa, cooled
*2.5 cups cooked corn
*1 small zucchini (hello, garden)
*1 cup fresh pitted cherries (hello, orchard)
*1/4 cup raw unsalted pumpkin seeds
*1 1/2 cups feta cheese, cubed
*1 apple, cored, cubed
*1/2 green pepper, chopped
*1 lime, squeezed
*3 Tbsp lemon olive oil (or unflavored with 1/2 lemon freshly squeezed)
*1 to 2 Tbsp unflavored olive oil
*3 Tbsp dark balsamic vinegar, flavored or not (I used blueberry)
*2 Tbsp 🍁 syrup
*salt
*pepper
Chop all produce and feta. Add to bowl with quinoa and corn. Toss gently. Mix oils, lime, vinegar, syrup, salt, pepper. Pour over dressing over quinoa mix. Toss to coat. Refrigerate for at least an hour for flavours to marinate. Enjoy!

Five weeks ago today... little did I know what I'd be facing...

The food and personal story
.
After a busy week and a particularly hectic jam-packed Friday, I decided to clean out the fridge and make a board.
.
Happily it meant using up, you know, the odds and ends plus other food items. I wanted to make space for garden produce coming up and a large grocery store shop the next week.
.
I was tired but thought it was expected given not only the busyness of the previous few days but many weeks of projects, jobs, and all kinds of pressures.
.
We enjoyed this finger food feast but I was wondering why this weird ear pain wouldn't subside. Usually pain killers -- since I often don't take any -- immediately help.
.
But I'll go on with that personal side of the story another time (though I'm healing and prognosis looks promising).
.
Now let's focus on the board here.

Not only is it easy to make but relatively inexpensive, so flavourful, the mouthfeel fantastic, and wowee, the nutrition. 🎉

SAVOURY CITRUS KALE AVOCADO SAUERKRAUT FETA 🥗
.
Until I come up with a better name, this is what it is called.
.
But, what? What makes it a 🏆?
.
Sauerkraut!! (Yes, keep 👀)
.
First, the INGREDIENTS, to taste:
*fresh garden dinosaur kale
*@oliveoilbc Lemon Twist sea salt, or your sea 🧂 preference
*Award-winning Kalamata 🫒 UP EVOO (purchased at Olive Us), or your exceptional quality EVOO
*avocado
*cucumber
*pumpkin seeds
*feta cheese
*lime
AND WHAT REALLY MAKES THE SALAD
*homemade sauerkraut, mine gifted to me by my thoughtful sweet friend Jenny @copperridgefarmbc

METHOD
Rip up kale, and sprinkle sea salt on top. Massage in the salt with your hands until absorbed. Add a splash of EVOO and toss again with your hands to softened kale.
.
Chop up 🥑 🥒 feta 🧀 and add to kale.
.
Sprinkle in 🎃 seeds.
.
Squeeze lime juice and add more EVOO, all to taste. Toss gently.
.
Add in sauerkraut pieces. Toss again to mix, separating any chunks of sauerkraut.
.
Enjoy immediately!

🌟 Great for digestion, immune support, overall health 👍

Terrific for a light meal salad, especially on those hot 🥵 days. No heating up the house to make.
.
Note: it's best to use homemade sauerkraut for its nutritional value and not as salty taste as store bought; however, I know there are good brands out there so get the best!
.

DAY 5 of my Spring Clean Program

The salmon was rubbed with a combo of #upevoo and dried garden parsley, dried garden oregano, local ground garlic, other dried herbs, salt, pepper.
.
It went well with organic cauliflower that was riced and heated with coconut oil. Off heat, I added freshly squeezed lime.
.
That salad is a combination of my garden greens, garden chives, tomatoes, grapefruit segments, and cucumber. The dressing is tahini mixed with freshly squeezed grapefruit, garlic powder, salt and pepper.
.
Did I say delicious enough??
.
Very much enjoying this spring reset. Such a good time to not only freshen up foods and flavour but take time to meditate/pray, do light exercises/stretches/yoga, have a mineral bath and more.

I missed you all.

After more than three weeks of waiting for my new phone, I received it yesterday! (See previous post about my phone story. Blech.) Good thing my older phone at home when I arrived back from Phoenix two weeks ago was still working so I could at least do some tasks!

The thing is I didn't feel like taking pictures or being on social media much without having a newer version in my hands.

Presently, I have the latest tools. Yay!

Now, let's focus on this board, one you may have seen a glimpse of in my stories a few weeks ago.

Let's call it a board to show my appreciation for the love and kindness of my dear Olsen family, specifically my twin sister @lanamargaret.❤️ They hosted me again and boy did I feel special!

I used goodies I purchased along with food I found on hand in their storage.

WHY YOU HAVEN'T SEEN ME

Can't believe it's been almost two weeks since my last post. It's not like I wanted to leave IGland but I found myself in a bit of a situation.

Story Time

Firstly, after arriving in Phoenix, I happily had use of my phone taking lots of pictures of precious family time and the beautiful surroundings.

A few days later my sister and I took off for a few days, just the two of us, to enjoy lakeside camping in a choice spot at one of Lake Pleasant's campgrounds. Sweet sister time in Olsen's fabulous trailer!

Then... I had a fall, landing directly on top of my phone on a rocky incline near the lake shore. Luckily I only sustained bruising and light whiplash, but my phone? Crushed. Broken beyond repair.

I no longer had phone use which also meant very limited communication -- I had troubles accessing social media and email -- even when my sister generously offered her phone and computer for me to use; due to 2-step authentication I could not access my accounts since codes were set up to be sent to my phone!

This story is even longer but egads, I'll finish up by saying...

I was forced to decide if I would be in the present, without the distraction of a phone in my hand. Sure, I missed capturing pictures/ moments but I can honestly say now it was a good thing to be free from technology for that time.

It wasn't easy for certain! I didn't think I'd miss it that much; however, when I finally released myself from stress and worry of how I was going to travel home without a phone or computer, I began to be in the present taking in sights and sounds I know I would have missed otherwise.

Now, here are a few pictures my sister took of me when I was there. It was a wonderful time being with my dear family. Hopefully it won't be three years until I visit again.

PS - I am crossing my fingers hoping I can extract pictures from my damaged cell phone. Love to show you what I took. If not, the memories are stored. That's what counts.

My ancestral homeland is Ukraine. I'm 100% Ukrainian by heritage with continued ties to this beautiful country.

My infant mom and her family fled in 1939 just before WW2 began. My dad's family (some born there, my dad and others born here) almost all left years ago... my oldest uncle's family still live there.

I have numerous relatives from both sides throughout the country.

Today marks yet another grave day for Ukrainians.

While I offer up contined prayers for Ukraine -- which may seem pointless to some -- it's what I'm personally doing as an act of something.

DANCE PARTY: SCENTATIONAL SPICY COCONUT SALMON VEGGIE BOWL!

All the flavour lives here. And the aroma... ah.... an invitation to join the dance at the party-of-the-mouth! Make the spice blend for use immediately with leftovers for another time. ⁠

Free recipe⁠
⁠
Ingredients⁠
EVOO, to preference⁠
1 tsp each ground cumin and ginger⁠
1/2 tsp each smoked paprika, turmeric, garlic powder⁠
1/4 tsp each ground cardamom, cinnamon, pepper, salt⁠
Salmon, approximately 1.5 kg⁠
1 can of coconut milk⁠
1 Tbsp red curry paste⁠
1 cup chopped mixed yellow and red peppers⁠
1 cup broccoli pieces⁠
2 Tbsp soy sauce⁠
1 Tbsp fish sauce⁠
⁠3 heaping cups spinach
Sesame seeds, to taste

Directions⁠
Rub extra virgin olive oil into salmon flesh on both sides. Set aside. Mix seasoning/spices together (cumin, ginger, paprika, turmeric, garlic, cardamom, cinnamon, pepper, salt). Generously rub seasoning mix onto both sides of the salmon.⁠
⁠
In 400F oven, on parchment lined sheet pan, place salmon and bake for about 12 minutes (4 to 6 minutes per 1/2 inch thickness). ⁠
⁠
Meanwhile, in a large cooking pan, add the rest of the ingredients together except spinach). When salmon has baked almost through, add to this mixture and cook together until vegetables are tender crisp then add spinach and stir until it's just wilted.⁠
⁠
To serve, add cooked rice or rice noodles to a bowl and add salmon and vegetable sauce mix on top. Sprinkle black or white sesame seeds and serve immediately. ⁠

Note: I have only made this recipe once so may need some tweaking. Heads up!

The Story
.
Here's something I made yesterday for our "lupper" (between lunch and supper) 😄
.
We had some nutrite-free "healthier" fresh 🥓 to use up so I thought why not try to make "bacon roses" that would go perfectly with organic grape tomatoes and fresh spinach.
.
I rolled each slice up to resemble a rose, stuck two toothpicks at the bottom to form a cross (to keep it bundled), then brushed on a mix of 1 part 🇨🇦 🍁 syrup to 1/2 part dark balsamic vinegar. I baked in 400F oven for approximately 50 minutes.
.
Meanwhile, I beat 10 eggs and added a bit of salt and pepper. Poured/distributed evenly into 12 silicone donut container, used approximately 100g of crumbled feta 🧀 and 1/4 finely chopped red pepper in each. Baked in 400F for approximately 25 minutes until set.
.
While the above was baking, I thawed 🍒 and 🍓in a bowl. When thawed, I drizzled 🍯 on top with chopped chocolate pieces.
.
I added Greek yogurt to a bowl and mixed in some red beet powder and raspberry sugar.
.
To assemble, I decorated a cookie sheet with Valentine's colours, placed a heart shaped glass tray on top to which I added a base of spinach on one side. Layering bacon roses with tomatoes threaded on top, I used addition leaves to resemble rose leaves. Then placed the rest of the food accordingly to finish design.

*maple syrup & dark balsamic bacon roses with spinach leaves and red grape tomatoes
*red pepper feta cheese egg donuts
*thawed local cherries and strawberries drizzled with local honey and hazelnut & mint chocolate
*pink (using red beet powder) vanilla Greek yogurt and raspberry sugar

Was fun to make and eat. 💗❤

The Story

It's been a long time since I've made a board ~ over four weeks actually, December 30th, when we last met together as a family actually.

It's not like I haven't wanted to make one, just January, well, it was quite the month and frankly my heart wasn't into making one.
.
Today is different. While I could offer unrelated food thoughts on my mind about -- nope not going there -- I'm going to focus on why I made a board today. Not anything else!
.
We are happy that one of our daughters is here visiting us right now. And you know me, any overnight guest is usually treated to one of my boards. Not like I haven't shared boards with others, I just always try to share my love of board creation with our dear family and friends who stay with us.
.

Okay, I couldn't think of a better name though I could have called it Crunchy Butternut Squash Supreme Salad. ☺ In any case, it brings me 😊 so I thought I'd share with you what is in it.

On a Wednesday or anytime, consider tossing together 🥬 and spinach with... 🥁 roll...
.
✅ local roasted butternut 🍠
✅ local dried 🍒 or other fruit
✅ 🎃 seeds
✅ feta 🧀
✅ local walnuts
✅ 🇨🇦 hemp seeds
✅ local shallots
✅ & anything else that suits you

The Story

Thankfully I can reach into my freezer and pull out summer season goodness captured to make a delicious drink in the winter!
.
Here we have my garden rhubarb, local grapes from my neighbour, and local strawberries from @davisonorchards. In a large pot, I poured water over them just to cover, brought to a boil, then turned the stove down to simmer.
.
After about 15 minutes, I mashed the fruit a bit, added Ceylon cinnamon sticks and fresh ginger chunks. I simmered for another 15 minutes.
.
I strained the pulp out reserving the juice and poured into mugs with local @hive.ology turmeric honey (local honey with the addition of turmeric infused in it), stirred, then added freshly squeezed lemon.
.
We enjoyed it hot for immediate satisfaction, nutrition, and experience.
.
And, those bits you see floating on top are the turmeric pieces. Wonderful to crunch on while sipping to get a zing of flavour 😋 So nutritious!

𝙒𝙝𝙚𝙧𝙚 𝙤𝙣 𝙚𝙖𝙧𝙩𝙝 𝙙𝙞𝙙 𝙄 𝙛𝙞𝙣𝙙 𝙖 𝙛𝙧𝙚𝙨𝙝 𝙥𝙪𝙢𝙥𝙠𝙞𝙣?

I picked it in a pumpkin patch last October 1. Yep! It stored so well in a cool dark spot in our basement. Today I finally used it.

I decided to create a stuffing for the pumpkin. The textures, flavours, nutritients make it a keeper. I encourage you to save it. Delicious!
.
Please know that the measurements are approximate and I'll want to make again to confirm... but it'll be fall before I can actually get a pumpkin of course; however, the stuffing can be made as a meal by itself. You don't have to have a pumpkin.

Ingredients
.
*1 pie pumpkin, top part cut off and saved as lid
*citrus or not flavoured olive oil (used Mandarin from @oliveoilbc)
*1 cup dry rice & lentils mix, cooked, follow directions (used @floatingleaffoods Ancient Field Blend)
*1 large local garlic clove, minced
*1/4 cup green onions, sliced
*1 1/2 cups sliced local 🍄s
*1/4 cup each soy alternative, 🇨🇦 maple syrup, water
*2 Tbsp 🍎 cider vinegar
*sea salt, to taste (used 🍋)
*2 Tbsp each tahini, fresh or frozen parsley
*3/4 cup small peas
*1 local 🍎 (used Ambrosia)
*1/4 cup each pomegranate arils and chopped local walnuts

Directions
1. Cut pumpkin top, deseed (save), massage with oil
2. Roast pumpkin in 400F until tender, approx 40 minutes
3. Cook rice / lentils (about 20 minutes)
4. Meanwhile prep foods that need chopping
5. Heat oil in a pan, add mushrooms, onions, garlic and cook for about 5 mins
6. Add soy alternative, syrup, ACV, salt, water and cook down for 5 mins
7. Stir in tahini, cooked rice/lentils, and remaining ingredients for 2 mins to blend
8. Stuff pumpkin if using, lower oven to 275F and heat for about 5 mins
9. Serve topped with more pomegranate and walnuts. Enjoy!
